Broccoli Rice




Broccoli – tops are chopped small

Shallots – sliced

Garlic – minced

Ginger – minced

Sea Salt

Braggs Amino Acid

Red onion – diced

Brown rice and quinoa – cooked together, put aside.

Saute shallots and garlic in coconut oil until fragrant.

Add broccoli for several minutes until half cooked – do not overcook.

Season with sea salt.

Add rice mixture, put on top of broccoli, I(1st picture) add a little water if too dry – add onions over rice, cover with lid, turn off heat.

About 10-15 minutes later, remove lid, sprinkle some Braggs, add ginger, toss thoroughly.  Mine sat for another half hour since hubby was late getting home – that might have infused the flavors togeether.

I overcooked the broccoli today, but the onions added a sweet crunch.

As usual, when we eat, I will add some flaxseed oil.

Season with sea salt.

NOTE: I season as I cook, the food is much more flavorful.
