HUBBY’S VEGETARIAN CURRY IN A HURRY

Hubby's Hurry Curry

Ingredients:

4 small red potatoes, skins intact, cubed

Kale – slivered

Curry paste

Shallots – minced

Ginger – minced

Young coconut flesh and water (blended in Vitamix)

Coconut oil


Heat coconut oil in pan, fry shallots.

Add curry paste and fry to mix well.

Add potatoes, fry to coat.

Add kale, fry to coat.

Add coconut meat and water, fry and mix.

Cover pan for about 25 minutes (depending on how much coconut water you have in the pan.)

Serve with organic white rice.


NOTE: if you don’t have a blender, chop coconut meat into small pieces or mince, mix with coconut water, add a little curry paste into it and let sit before use and incorporate into pan as above.

A1 Curry Paste

NOTE: The curry paste came from a trip to SEA but I have seen many different kinds of  curry pastes in ethnic stores in USA.

NOTE: Young fresh coconuts in Chinatown cost about $1 each, the same coconut in Whole Foods is $2.99.
